This recipe for Keto garlic bread is the perfect way to start a meal.  And luckily for us, each of these low carb rolls has just 5g net carbs.

WHEN YOU ARE ON A LOW CARB OR KETO DIET, YOU GET USED TO REFUSING THE BREAD.
“Would you ladies like to start with some crusty Italian bread with a garlic and herb butter? My mouth says no, but my brain says, “Yes!! Give me that gaddam garlic bread!!”
WELL, I CAN’T HELP YOU TURN DOWN THOSE TEMPTING BREAD BASKETS, BUT I CAN GIVE YOU A RECIPE FOR KETO GARLIC BREAD.
This low carb garlic bread is sure to satisfy your bread cravings.  The Keto garlic rolls that we are going to make today are made with Fat Head dough, so the net carb count is just 5g.
Grain-Free Gluren-Free Garlic Bread
BUT WHAT’S…FAT HEAD DOUGH?
You’ve probably heard of it before. It’s a Keto bread dough made from mozzarella cheese, cream cheese, almond or coconut flour, baking powder and eggs. These ingredients might not sound like they could make bread, but they actually do quite a good impression of it.
NOW GARLIC BREAD, NORMAL GARLIC BREAD, IS PRETTY SIMPLE TO MAKE. 
You just spread garlic butter on bread and toast it. But we are on a low carb diet, so nothing is that easy. So for these Keto garlic bread, we’ll be making our own dough, forming the dough into balls, rolling them in herbs and parmesan cheese, baking them up and then covering them in garlic butter. Sure, it’ll take longer to make, but at the end of it you’ll have a pan of delicious garlic bread rolls with only 5g net carbs each.

This recipe for low carb and Keto garlic bread rolls is just the thing if you need to ward off a vampire. And luckily for us, each piece has just 5g net carbs.

ingredients

2 1/2 cups shredded part-skim mozzarella cheese
2 oz full fat cream cheese
3 large eggs, beaten
1 1/2 cup super fine almond flour
1/2 cup coconut flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon Italian seasoning
1/4 cup grated Parmesan cheese
3 cloves garlic, minced

instructions

1. Pre-heat oven to 400 degrees F and grease a small 8 inch cast iron skillet liberally.
2. In a large microwave safe bowl, melt mozzarella and cream cheese in the microwave for 1 minute. Stir to combine. Microwave for another minute and stir again until smooth and fully combined. If it hasn’t completely melted, then cook for another 30 seconds and stir again.
3. Mix together beaten eggs, almond flour, coconut flour, baking powder and salt in a medium sized bowl.
4. Mix dry ingredients into the cheese mixture and mix well until fully combined.
5. Mix together parmesan cheese and Italian seasoning on a shallow plate.
6. Use a cookie scoop to scoop out portions of dough. Roll the dough into 2 inch balls and roll the dough balls in the parmesan cheese until covered on all sides.
7. Arrange the dough balls in the cast iron skillet. You’ll need to make a few a little smaller in order to fit them into the middle of the pan.
8. Bake for 20-25 minutes until golden brown. Loosely cover with a piece of foil at minute 10 to keep it from browning too much.
9. In a small microwave safe bowl, microwave butter and minced garlic for 2 minutes. Use a spoon to pour the garlic butter over each piece of bread.
10. Best served warm. Can be reheated in the microwave for 30 seconds.

Sometimes on the keto diet, I’ve noticed that I eat differently than my family. It’s pretty frustrating, cause I’ll start to crave what they are eating.

That’s why I created these. They are a kid-friendly low-carb snack that my kids actually want to eat with me.
In fact, they are so easy to make that my kids will often jump in and make themselves some at the same time.

KETO APPETIZER FOR PARTIES

Another struggle on the keto diet is finding things to serve as appetizers at parties. Lots of finger foods are high in carbs. Have you noticed that too? Other than sliced raw veggies, what else can you serve that won’t kick you out of ketosis?





That’s why I love these little roll-ups. They work perfectly at parties. Everyone will love them, so make a bunch!



I will tell you that if you want something that resembles a thin and crispy pizza crust (and not a roll-up), then use parmesan cheese. It will feel like a crispy tortilla chip almost after it is done baking in the oven.

HOW TO MAKE KETO MARINARA SAUCE

The easiest option is to buy keto marinara sauce at the store. Look for “sugar-free” or “no sugar added” on the label.
You also want to read the ingredients list. If it doesn’t say some form of sugar (high-fructose corn syrup, syrup, or sugar), then it is keto-friendly. Just remember to measure how much you eat, because tomatoes naturally have carbs in them.
If you want to make your own, that’s super easy to do as well.  It’s basically tomato puree, red wine vinegar, keto sweetener of your choice, and a bunch of Italian seasonings (like garlic and oregano). If you make your own, you can control what is in it and how it tastes, so I always love making my own.

KETO PIZZA ROLL-UPS RECIPE

Here’s the recipe with step-by-step pictures. Follow along and make your own.
Ingredients:
12 slices of mozzarella cheese
Pepperoni slices or you can use mini pepperoni as well
Italian seasoning
Keto Marina Sauce
Directions:
Preheat oven to 400 degrees.
Line a cookie sheet with a baking mat or parchment paper.


Now lay slices of cheese on the baking mat and place in the oven for 6 minutes or until cheese slices start to slightly brown around the edges.



Remove from the oven and allow the cheese to slightly cool. Allow the slices to cool and sprinkle with Italian seasoning and add pepperoni if you would like.
Roll and serve with your favorite dipping sauce! Enjoy!

This Keto Cashew Chicken is a low carb version of a classic Chinese takeout favorite! A super easy (and healthy), one-skillet meal that’s the perfect busy weeknight meal!



Along with meal prepping lunches for the week, I also keep a few favorite keto dinner recipes on heavy rotation. This alleviates the stress of coming up with dinner every night of the week and it ensures that everyone will actually like what I made.

Chinese food is always highly requested and among our favorites are egg roll in a bowlbroccoli fried ricelow carb sesame cauliflower and more recently this keto cashew chicken. All of these Chinese keto recipes can be made in under 30 minutes, so they’re not only easy to make they’re also quick too!

BETTER THAN TAKEOUT AND BUDGET-FRIENDLY TOO!

Chinese is my husband’s go-to takeout so making recipes like this Keto Cashew Chicken is not only better for us but it’s also more budget-friendly.

DOES KETO CASHEW CHICKEN REHEAT WELL?

Absolutely! This is the most frequent question I get asked about our keto recipes with sauce. I’m big on meal prepping and most recipes that contain a Keto sauce will reheat wonderfully!

HOW LONG DOES THE CASHEW CHICKEN LAST IN THE FRIDGE?

When properly stored this cashew chicken recipe can last for 3 to 4 days in the refrigerator.

HOW TO MAKE KETO CASHEW CHICKEN

Ingredients:

1 1/2 pound of chicken breast cut into chunks (can also use thighs)
1/8 tsp salt
1/8 tsp pepper
2 tsp avocado oil
1 green pepper cut into chunks
1 white onion chopped into chunks
1/4 cup of roasted cashews
Sesame seeds for garnish
Chopped green onions for garnish
1 tbsp rice wine vinegar

Sauce:

3 tablespoons of Liquid Aminos
2 teaspoons sesame oil
1 tsp ground ginger
2 tbsp garlic
1 tbsp Chili Garlic Sauce Use only 1/2 tsp for a milder recipe or double if you want it spicier!

Directions:

In a bowl add sauce ingredients (chili garlic sauce, sesame oil, minced garlic, ginger, salt, and pepper to taste). Set aside.


Heat skillet (I use this skillet) on low-medium heat and toast cashews until lightly brown and set aside.

  Add avocado oil and increase heat to high and add chicken and cook through



Now, throw in the pepper, onion, and the sauce mixture and cook on high for about 5 minutes.





Next, you’ll add the liquid aminos, cashews, and rice wine vinegar into pan. Cook until sauce has thickened.





Top with sesame seeds and green onions, and serve!

Make it yours:

Replace green peppers with red pepper or broccoli (I’ve even used cauliflower)
Drizzle with hot sauce or sesame oil
Top chicken with bean sprouts
